Last night, after reuniting with my sadly neglected treadmill, I sat down to write down everything I ate during the day. Nothing about that statement is typical, of course. What is typical? The fact that I ate a burrito for every meal.
Okay, I don’t normally eat three burritos in one day, but yesterday? I did it.
Breakfast burrito – check.
Chili burrito for lunch – check.
Taco Bell for dinner – check.
You probably won’t be surprised to learn that I was over my Weight Watchers points for the day.
Also not surprising? The fact that I’m looking for an excuse to make something Mexican today for Cinco de Mayo – and that I’ve already been to the store for tomatoes, cilantro and tortillas!
I’m not sure what I’ll be making for tonight’s dinner, but I can guarantee taco seasoning and salsa will be involved. Just in case you, too, are in the
random, oft-misunderstood holiday spirit, here are some of my favorite recipes for Mexican dishes (and appetizers).
- Tortilla Rolls and MexiDip
- Seven Layer Dip
- Beef Burrito with Chili
- Spicy Chicken Spaghetti
- Fiesta Chicken Enchiladas
- Cheesy Beef Enchiladas
- Chicken Enchilada Soup
- Chicken Nachos
- Chicken Nachos, part deux
- Shredded Beef Tacos and Pico de Gallo
- Taco Pasta Casserole
Will you be eating Mexican food today?
