Monday Morning Mmmm: Bacon Chicken Bites

Over the weekend I discovered a website devoted to top 10 lists. This does not bode well for my level of productivity. One of the lists I read was best food combinations, and as I read it to Mark, he decided to make his own list – of the top 10 ways bacon is combined with other foods.

He didn’t actually come up with ten, but he gave it a good try. The bacon combo that I suggested (after he listed the obvious bacon and hamburger, bacon and shrimp, and bacon and eggs) was bacon, brown sugar and anything.

Case in point? Bacon-wrapped chicken bites, a tasty little snack I saw on Foley’s Follies. I made these a few weeks ago when we had friends over for dinner, and they were a hit. They were messy, but a hit. A messy hit.

Bacon Chicken Bites

Ingredients
1.5 lbs. boneless, skinless, chicken breasts (about 4 breasts)
1 lb. bacon
2/3 cup firmly packed brown sugar
1 tablespoon chili powder

Preheat oven to 350 degrees. Cut chicken into 1-inch pieces, and cut bacon strips into thirds. Wrap chicken with bacon and place, seamside down, on baking sheet. (Cover that baking sheet with foil if you want a less messy situation.) Mix brown sugar and chili powder, then cover bacon pieces. Bake for 20-30 minutes (however long it takes for bacon to crisp up).

I would suggest serving with toothpicks. But that’s because I’m fussy and don’t like a mess. You can also use more chili powder. The original recipe called for two tablespoons. I’m just not that brave.

  9. You know what I have to say to that? MMMMMM.

    I would go with bacon and corn, bacon and green beans, oh anything that makes it sound like it’s a vegetable and healthy so you have a good excuse to eat BACON.
