A {Mexican Food} Love Affair

Last night, after reuniting with my sadly neglected treadmill, I sat down to write down everything I ate during the day. Nothing about that statement is typical, of course. What is typical? The fact that I ate a burrito for every meal.

Okay, I don’t normally eat three burritos in one day, but yesterday? I did it.

Breakfast burrito – check.
Chili burrito for lunch – check.
Taco Bell for dinner – check.

You probably won’t be surprised to learn that I was over my Weight Watchers points for the day.

Also not surprising? The fact that I’m looking for an excuse to make something Mexican today for Cinco de Mayo – and that I’ve already been to the store for tomatoes, cilantro and tortillas!

I’m not sure what I’ll be making for tonight’s dinner, but I can guarantee taco seasoning and salsa will be involved. Just in case you, too, are in the random, oft-misunderstood holiday spirit, here are some of my favorite recipes for Mexican dishes (and appetizers).

  1. I forgot it is Cinco de Mayo. Haha! Now I may have to figure out Mexican for tonight. :) Those pictures sure are inspiring. Haha! Way to go on doing the treadmill… :)

      I’ve only hit the treadmill once a week for the past two weeks. I figure that’s better than nothing, but I’m planning for more/better this coming week!

  2. Early on in marriage, my husband pointed out that I had fixed Mexican food every night for a week. It never even occurred to me.

    And hello? A breakfast burrito is a totally different thing from a chili burrito which is a completely different thing from a Taco Bell burrito.

      Right! I mean, the breakfast burrito had sausage, the chili burrito had chili (shocker!) and the Taco bell burrito had chopped onions. Totally different!
