Monday Morning Mmmm: Chocolate Eclair Dessert

I’ve actually seen this recipe on two blogs recently. Unfortunately, I can’t remember which two blogs. Anyway, it’s one that I’ve made several times and had the opportunity to make this weekend.And every time? It is deeelicious!

I’m talking about Chocolate Eclair Dessert. It’s possible this dish has a fancier name, but that’s what I call it. I can’t remember where I got the recipe either.

Do you see a pattern here?

Now, I’m going to give you this recipe. It is both easy and tasty. But don’t be blaming me if you must immediately run to the store, make it and eat it all at once. Unh-uh. Not my fault! Besides, you can re-start that diet tomorrow, right?

I may have sorta kinda forgotten to take a picture before we dug into it!

Chocolate Eclair Dessert

2 packages graham crackers
2 – 3 oz. packages instant vanilla pudding
3 cups milk
1 – 8 oz. tub of whipped topping
1 – 16 oz. can of chocolate frosting

Mix pudding, milk and whipped topping. Cover the bottom of a 9×13 pan with graham crackers. Pour half of the pudding mixture on top. Layer grahams, then pudding twice. Cover with graham crackers, then pour softened frosting on top. Refrigerate for at least an hour.

Now, there’s nothing I can do about the chocolate frosting. (Except lick the spoon. I can do that.) But you can use skim milk, sugar free pudding, low-fat graham crackers and fat-free whipped topping. Making those changes doesn’t really affect the taste and it might be enough to help you rationalize that second piece. I know it is for me.

    My mother-in-law makes this at least once a month for Sunday dinner – and every time I struggle not to eat the entire thing. :-)

    My favorite easy receipe is a "trifle". Crumble your favorite cake, then layer it with your favorite instant pudding, top the whole thing with whipped cream.

    Can you tell my mind is centered on sweets today?

    Okay, seriously, why'd you have to go and do that?!…

    I've never had such a thing — but I love eclairs so I know I'm so making this — and who cares if the rest of them like it?!

    The easiest thing I still make is good ole velveeta and salsa — how embarassing is that? Stick in the microwave and enjoy with chips — quickly. And this totally doesn't count as a real recipe — it's just that I haven't had enough coffee to come up with anything better.

    Mmm, that looks yummy. When I'm craving a Reese's, I take a large spoon, scoop a big ol' glob of peanut butter, then squish a generous amount of chocolate chips into the gooey pb, and enjoy! That's easy and it gets the job done. I'm not too hard to please. :)

    As far as recipes… I have a cream cheese pie that's made with a store-bought graham cracker crust, instant lemon pudding, cream cheese, milk, and topped with a can of cherry pie filling. Easy and delish.

    That is one of my favorite desserts too!!! Love it, except the recipe I use has you make the chocolate frosting so it's more of a hardened ganache. I guess that makes it a little less easy, but it's still pretty basic.

    I just made this recently for a ladies game night for church. It barely hit the counter before the girls were scooping it onto their plates! I was reading at allrecipes.com where I originally found the recipe that many people have had good success using different flavors of pudding. Just an idea!

    mmmm…I love this dessert, and this is my favorite way to make it, although I am in possession of a lighter, weight watchers version that is also delicious!

    I make a very similar dessert … using chocolate pudding instead of frosting. We both have to watch our sugar intake, so by using sugar-free chocolate and vanilla puddings, we feel like we're cheating when we eat this. Thanks for sharing!
